Chicken Katsu - thigh or breast? I have discussed about this topic in Chicken Katsu recipe post. For the Katsu curry, I recommend to use breast because using chicken thigh is too oily for the curry. The chicken breast will stay juicy because it is covered with curry sauce.
Langkah-langkah Untuk Membuat Chicken Katsu with Curry & Salad
- Cuci bersih dada ayam, baluri dengan bawang putih halus, garam dan lada bubuk. Marinasi kurang lebih 30 menit agar bumbu meresap (kalo aku kubiarkan semalaman di kulkas).
- Gulingkan ayam pada tepung bumbu serbaguna > kocokan telur > lalu baluri dengan tepung panir sampai tertutup rata.(Untuk hasil lebih maksimal sebaiknya masukan kedalam freezer sampai agak beku/tepung panir benar2 menempel sempurna), tetapi bila langsung digoreng juga gakpapa..
- Goreng sampai chicken katsu benar2 tertutup minyak panas, angkat bila sudah berubah kecoklatan..
- Potong dadu wortel & kentang, bawang bombay, cuci. Kemudian rebus kentang dan wortel sampai empuk, tiriskan..
- Panaskan mentega, tumis bawang bombay sampai hingga harum,kemudian masukan bumbu kare indofood, aduk merata. Masukan air, maizena yg sudah dilarutkan, kentang & wortel rebus. Cek rasa, jika keasinan bisa ditambah dg air lagi..
- Membuat salad : Potong kubis dan wortel tipis memanjang, cuci (pastikan benar2 bersih karena kita makan sayur mentah).Dalam wadah/toples campur semua bahan rendaman sampai gula larut, masukan sayuran sampai terendam air semua.Tutup rapat, masukan dalam freezer 15 menit kemudian pindahkan ke kulkas selama kurang lebih 4 jam (lebih maksimal jika disimpan semalaman)..
- Sajikan chicken katsu dg saus kari, salad, saos dan mayones, bisa juga ditaburi dengan lada bubuk 😋😋😋.
